Berkel Model 8H-21 2nd  replaces the model 8H-21 1st series, the model 20 and the models 5 – 7.

The slicing synchronism of the whole range of this model is similar to the previous ones (models 5 – 7), but its parts have been so improved and perfected that will be used for the whole production till the 60s, in fact the endless screw and the comb pass to have a conical groove instead of the straight groove.

Particularly the comb doubles the contact surface, it is no longer fixed on the fixing vice but on a telescopic shifting stage. It is fitted in the endless screw with a very high connection load. All that, together with the conical connection, offsets the comb wear allowing the utmost efficiency of the machine and its life.

On the staging a pivot comes out where the vice is fitted and blocked.

The endless screw and the staging are capped by a shaped cover and no longer at sight as for the previous models.

The closed and smooth flywheel puts a gearing system action located under the base into and causes the motion both of the blade, by means of a chain, and of the shifting cart, by means of two connecting rods.

Close to the blade the shifting cart runs inside a hub capped by an round guard. While in the opposite side  the cart leans on a square rod by means of a bearinged wheel. That is different from the model 8H-21 1st series where the cart shifts by a slot inside a painted square rod. The two shifting guides are supported by four small columns (two for each part) fixed on the base.

The slice adjustment clock is fixed on the base of the machine and puts a bill shaped lever into action and is on the same axis of the cog-wheel located on the cart, that puts the endless screw into action where is inserted the telescopic staging supporting the comb. The staging is hitched to the vice and produces the slicing movement. A crank connected to the cog-wheel moved by hand on the right or left shifts the vice consequently as you like.

The hub supporting the blade is fixed to the shoulder. That is flat outside with a wing shaped arch. This allows to lengthen an opal glass top tray. So you can manage more laying surface.

The sharpener is inside a painted cap; a lever acts on a cam moving the two sharpening grindstones.

  • when it is necessary, we manufacture the parts worn out by the times, using our best artisan knowledge and love;
  • we do kiln varnishing, rejecting any transparent varnishes peremptorily, considering they did not exist in the time the machines we are look forward are referred;
  • we make every decoration by hand, rejecting peremptorily the use of adhesives or the use of any airbrush;
  • we issue the authenticity certification proven by copies of original drawings;
  • we warrant their perfect working for a five year period.
